Responsibilities and Qualifications

Under the direct supervision of the Food Services Manager, the Supervisor of Food Services has the responsibility under Food and Nutrition Services (FAN) for assisting with the coordination of development, recipe standardization and implementation of menus, as well as planning, organizing, staffing and supporting the direction of kitchen operations and personnel. Performs duties and responsibilities in a manner consistent with our mission, values and Mercy Service Standards.

 

Management Performance

  1. Supports the planning of staffing schedules and training of the production staff in kitchen operations and makes assignments according to established patterns and demands.
  2. Ensures work is done in a timely manner and that it demonstrates excellent service standards.
  3. Supervises employees to maintain the sanitation requirements of the State Health Department.
  4. Helps maintain a cleaning schedule that allows for individual accountability when meeting the standards of sanitation and ensures that all foods prepared meet the temperature requirements of the State Health Department.
  5. Participates in interviewing, recommending employment, training, counseling and preparing performance evaluations for direct reports, according to the hospital policies and criteria.
  6. Evaluates all employees fairly and consistently in a timely manner, providing copies to the Food Services Manager for review prior to completion and according to procedure.
  7. Maintains employee personnel files and assists with counseling and assigning disciplinary action promptly as situations dictate and always in an appropriate manner according to department policy and procedures, using proper documentation.
  8. Monitors employee timecards and makes edits for payroll according to standard procedures.
  9. Supports the purchasing, receiving and issuing of food and supplies within FAN as needed.
  10. Operational and Budgetary Performance

    1. Monitors daily the effectiveness of the employee work schedule and suggests adjusting as necessary to assure all work is completed while staying within budgeted FTE’s.
    2. Monitors annual retraining calendar to insure all mandatory training/education requirements are up to date.
    3. Develops and evaluates departmental staff through ongoing in-service education, training/retraining and observation by conducting weekly staff meetings and scheduled in-service training, orientation and on-the-job training for staff on a regular basis
    4. Makes recommendations to the Food Services Manager, through effective communication, regarding enhancement and improvement of services.
    5. Monitors portion control, appropriate food temperatures, product acceptability, food quality and food preparation on a daily basis.
    6. Reviews employee timecards weekly for accuracy, attendance and leave as well as approves timecards bi-weekly for payroll.
    7. Provides support to the Hospitality Supervisor and Catering Supervisor for all special events to ensure they are carried out as planned.
    8. Has a working knowledge of cafeteria cash operations and inventory functions in order to work as a backup to the Hospitality Supervisor and Inventory Coordinator regarding stock.

QUALIFICATIONS MINIMUM REQUIRED

Education: Bachelor's degree in Restaurant Management, Business

Administration, or related field or five to seven years food

service supervisory experience.

Experience: One to three years food service supervisory experience required
