The Cook provides service to patients, public and co-workers while performing a variety of food production duties such as measuring, mixing, portioning, stirring, braising, baking, roasting, frying, broiling, steaming, grilling and garnishing. Follows the highest sanitation principles in accordance with Hazardous Analysis Critical Control Points standards for food, equipment and self. Keeps all areas clean and sanitary. Provides assistance to all areas of the department as needed. Complies with all HACCP sanitation standards. Reports to the appropriate food service manager.
Food Preparation-Utilizes standardized recipes following HACCP sanitation standards in the handling and preparation of all foods. Maintains high quality standards following production orders and special instructions meeting established time lines.
Maintains Equipment and Operates Safely-Cleans and sanitizes all equipment immediately after use. Operates equipment safely and complies with operation techniques established in competencies. Reports equipment that is not working properly immediately to management for repair and makes sure co-workers know the condition of the equipment.
Ensures Food Safety by following HACCP principles utilizing appropriate labeling, rotating and storage of foods during preparation and service and FDA following guidelines as required.
Follows all department / organizational standards such as but not limited to co-worker/customer requests in a prompt and courteous manner, tray line requests, etc.
Meets all required HACCP's documentation such as but not limited to temperature charts, etc.
Because you’re committed to excellence, you understand the importance of being properly prepared for your role at Mercy. That’s why you’ll bring to your role the right set of qualifications:
Experience: Two-Three years in a large quantity production kitchen is required.
Other: Must be able to communicate clearly orally and in writing. Must be able to comprehend written and oral instructions in order to read recipes, orientation materials, menus, production sheets. etc. Ability to analyze completed products and products in the process of production to determine quality and degree of doneness. Ability to manage time in order to meet deadlines for production. Calculate simple math to expand/decrease recipes.
Preferred Education: High School diploma or GED
